Ginger Shortbread Biscuits!

They're so quick and simple to make!
Metric: 250 g butter
Imperial: 8 oz soft butter
125 g icing sugar
4 oz icing sugar
250 g plain flour 8
oz plain flour
2 X 5 ml spoons ground ginger
2 tsp. ground ginger
1/2 ml spoons allspice (optional)
1 tsp allspice (optional)
icing sugar for sprinkling
Cream
together the butter and sugar. Gradually work in the sifted flour and ginger to form a dough. Knead until smooth. Roll out into (5
mm) 1/4 inch thick and cut into rounds with a medium scone cutter, or any shaped cutter. Place on a baking sheet. Bake in a pre-heated moderate
oven until golden brown, and sprinkle with icing sugar while still warm. When cool, wrap in foil or carry in a rigid container.
Makes a tasty, great picnic snack that goes anywhere...especially with camp coffee and good company!
